- Pizza kitchen is located in the back room. Operator is still not making pizza onsite at this time; frozen pizzas purchased from approved grocery stores are heated using the pizza oven, sliced in the pizza kitchen/back room, and placed in hot-holding unit for selling pizza by-the-slice. Only one pizza is held at a time, and is held for less than 2 hours.

- Accurate thermometers available.
- Chlorine-based sanitizer solution available at 100 ppm.
- Pizza prep cooler (only used to store a very small amount of food) measured at below 4C.
- Freezers measured at -18C or colder.
- Hand sinks properly supplied with hot and cold running water, liquid soap, and paper towels.
- Three-compartment sink available for manual warewashing. Sink drain plugs available.
- Food storage practices satisfactory
