Observation (CORRECTED DURING INSPECTION): No drain plugs were available for the sink basins for manual warewashing. This is evidence that dishes are not being washed properly.
Corrective Action(s): Operator purchased drain plugs during the inspection. It is expected that utensils/ dishes are washed and rinsed in the first basin and finally sanitized in the second basin (fill the 3rd sink with a bleach and water solution - every 2 tsp bleach per 1 L water). Utensils and dishes must be submerged in the sanitize basin for at least 30 seconds before allowing them to air dry before storing away.

Observation: Window in the washroom was opened during the inspection, however no screen was installed at the window.

Routine inspection conducted today:
Handwash stations, including washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Hot food was being held at 82.0C in the hot hold unit.
A sanitizer spray bottle was prepared and noted at 200 PPM chlorine residual.
No signs of pest activities noted during the inspection.
Excellent sanitation and organization noted.
Staff (onsite at the time of inspection) has a valid FOODSAFE level 1 certificate.

Note: During the inspection, observed pre-portioned goat meat, ox tail, chicken feet and turkey neck being sold in individual packages with no proper label. As per operator, they were purchased in larger amount from an approved supplier (name provided) and portioned at this facility into smaller bags for sale. Operator must provide receipt (via email) to the district Health Inspector as evidence that these meat are purchased from an approved source - to be submitted by March 19, 2024.
