Observation (CORRECTED DURING INSPECTION): Dirty knives stored in the knife holder. Metal racks had debris stuck in corner. Staff started cleaning the items at this time.
Corrective Action(s): Ensure to wash/sanitize knives prior to storing them in the holder, as the inside of the holder is difficult to wash/sanitize as discussed at this time. Wash and sanitize all knives and inside the holder. When cleaning the racks, ensure to scrub off all debris remaining in corners.

Observation (CORRECTED DURING INSPECTION): >>200ppm chlorine solution was available in a Quats labelled spray bottle. Bottle was emptied out, washed thoroughly and filled with 200ppm Quats at this time.
Corrective Action(s): Ensure 200ppm Quats or chlorine solution is available for disinfection of all prep surfaces at all times. All prep surfaces must be sanitized using the solution every morning and after each possible contamination during operation.

Observation (CORRECTED DURING INSPECTION): None of the handwash stations had paper towels in the dispenser. Replenished at this time.
Corrective Action(s): Ensure all handwash stations are adequately supplied with paper towels, liquid soap and hot/cold running water at all times.

Corrective Action(s): Ensure to have all chemicals properly labelled.

Comments

Routine inspection conducted:

-Coolers operating at/below required temperature of 4'C; Freezer below required temperature of -18'C.
-Meat processing room had ambient air temperature measured at ~6'C at this time.
-Temperature monitoring system in place. Logs kept up to date.
-Automated Quats dispensers at correct concentration.
-Equipment washed/sanitized regularly during operation as per facility's sanitation plan.
-No evidence of pest activity observed at this time. Professional pest control company contracted by Sobeys.
-Good hygiene observed by staff working on site.

General maintenance and sanitation of the facility is good, except mentioned above.
