Observation:
1) The upper walls, near the loading door areas, have accumulated dust on them. This dust can fall into food.
2) The interior surfaces of the exhaust canopies have accumulated food and dust on them. This dust can fall into food.
Corrective Action(s):
1) Clean the walls and any other structure that has accumulated dust on it. Ensure these surfaces are cleaned on a regular basis.

2) Contract a professional company to clean the exhaust canopies and ducting to remove the food and dust. Ensure professional cleaning of this equipment is done regularily (as recommended by the profesional company), and that staff clean all accessible areas on a regular basis between the professional cleanings.

Observation:
1) Areas of the floor have worn off paint and raw cement is showing. The raw cement will absorb foods and is not cleanabe.
2) There are ares of walls that have chipped paint and exposed dry wall. The exposed dry wall will absorb foods and is not cleanable.
Corrective Action(s):
1) Reseal or repaint the floor so that it is durable, smooth, sealed, and cleanable
2) Repair and repaint all damaged walls so that they are level, durable, smooth, sealed, and cleanable. The use of other materials (stainless steel, FRP, tiles, etc.) to cover the walls so they meet health standards is acceptable. Ensure the materials used are food grade, smooth, level, sealed, and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
- Cooler was 4C; thermometers present; and temp. recorded daily.
- Bleach sanitizer in spray bottle was above 200ppm.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; date coded; labeled; and stored in 6" off the floor on metal racks.
- No expired foods found in use. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests found. Orkin contracted to monitor for pests every month.
