Observation (CORRECTED DURING INSPECTION): Bleach sanitizer pail had no detectable chlorine sanitizer.
Corrective Action(s): Ensure sanitizer pail is maintained at 100ppm bleach to allow for sanitizing of food contact surfaces. Bleach at 100ppm was prepared at the time of inspection.

Observation: 1) Fried foods were stored in a cardboard box.
2) A container was stored inside a container of sauce in the walk-in cooler. A scoop was stored in the first container.
Corrective Action(s): 1) Ensure foods are stored in food grade containers. If foods are stored in a cardboard box, the box must first before covered with a food grade liner.
2) Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Floors under frying area are lined in cardboard and burlap bags. Cardboard and bag are changed weekly.
Corrective Action(s): If floors are lined with any materials which cannot be washed and sanitized on a daily basis, it must be discarded at the end of each night. Cardboard and burlap bags may potentially attract pests.

Comments

-Walk-in cooler was at 4C. Thermometer present in walk-in cooler.
-Upright freezer was at -14C.
-No potentially hazardous foods stored in the front cooler at the time of inspection.
-2-compartment sink had 100ppm bleach sanitizing solution prepared.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. For staff using single use gloves, ensure all staff adhere to good hand hygiene and glove changing practices.
-Foods properly stored off the floor and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Back screen door in place at the time of inspection.
-Washroom clean and well maintained.
-FoodSafe certificate valid until Dec 19, 2022.
