Observation: - Dry packaged retail food products (eg. bags of flour) were stored/displayed on the floor in retail area and back storage area.
Corrective Action(s): - Store all food products at least 6 inches off of the floor. Additional shelving may be needed to accomodate all food products. To be corrected by: 27-Jul-2022

Observation: - Mold/grime noted on portions of shelving and on fan guard in walk-in cooler
- Several used disposable aluminum trays with grease drippings were present in walk-in cooler
Corrective Action(s): Thoroughly clean/scrub ares noted above. Ensure these are part of your regular cleaning schedule so that they are maintained in a sanitary condition.
- Dispose of used aluminum trays.

Comments

Deli with retail area and limited take out food service (sandwiches, burek)
- Food premises maintained in sanitary condition with the exception of areas of noted in violation above.
- Hot and cold running water present at all sinks
- Handsink in food prep area and staff washroom supplied with liquid soap and paper towe
- Coolers were operating at required temperature (4C or colder):
- Walk-in cooler 4C
- Deli display cooler 4C (left side); 2C (right side)
- Small display cooler 4C (only shelf stable items stored inside)
- Retail sliding door cooler 4C
- Freezers were operating at required temperatures:
- Large chest freezer -20C
- Small chest freezer-22C
- Retail freezer -19C
- Hot holding unit not in use at time of inspection.
- Facilities/supplies present for manual dishwashing. Dishwashing sign posted at sinks. Plugs/stoppers present for sink compartments to allow them to be filled and dishes to be immersed.
Chlorine bleach present for sanitizing step. Chlorine test strips present to verify sanitizer level.
- Sanitizer solution present in spray bottle for santizing food contact surfaces including slicer. Concentration measured 200ppm chlorine.
- Meat/cheese slicer appears clean/maintained. Operator report slicer is cleaned and sanitized every 2 to 4 hours. Log sheet present with times recorded.
- Chemicals stored away from food products.
- No signs of pest activity noted at time of the inspection. Ensure monitoring is in place and if any signs of pest activity are noted, retain pest control services.
- Foodsafe requirement met - Operator present and has valid Foodsafe level 1 certificate (valid until January 2025)
- Health operating permit with valid decal posted in visible location.

Reviewed observations and required corrective actions with Operator and a copy of the report was provided.
