Routine inspection conducted and the following were noted:
All cooler units at 4C or below. Internal temperature of previously cooked products were less than 4C.
Freezer unit less than -18C.
Internal temperature of foods stored on the steam table was at least 60C.
Hand washing station in front dispensing area and kitchen area satisfactory.
All food items stored at least 6 inches off the ground and properly covered.
low temperature dishwasher achieved a final rinse concentration of 100ppm. Chlorine test strips available. Ensure test strips are used daily to verify chlorine dishwasher is in good working order.
Chlorine sanitizing solutions was prepared at the of inspection. Concentration was a 100ppm. Ensure all wiping rags are stored in solution when not in use.
General cleaning was satisfactory;however, more thorough cleaning is need on the shelving unit by the cooking unit.
