There is accumulation of flour on pipes, shelving units, and legs of tables and equipment in the cooking area. This will attract pests.
Corrective Action(s):
Wash these areas today to remove the accumulated flour. Ensure to clean the mentioned areas on a regular basis.

Observation:
Aluminum foil found to be covering walls and lining drip pans. Owner explained that they change the foil once a week. Food accumulates on the foil, which can not be clean properly, this will attract pests.
Corrective Action(s):
Change the aluminum foil every night and replace with new foil the next morning. OR, do not use foil to cover surfaces, just wash the surfaces (wall and drip pan) every night.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -10C or colder; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles had [Cl2] of 200ppm. Test strips present.
- All foods stored in food grade containers; labeled; date coded; foods stored in groups with raw chicken separate from other foods; and foods stored 6" off the floor on shelves, racks or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Improvement needed in the mentioned areas.
- No signs of pests. A pest control company monitors for pests on a monthly basis.
- 3-compartment sink used to wash and sanitize dishes.
- FoodSafe certified staff present.
- COVIE-19 measures in place, such as: masks worn by staff and patrons; max. capacity sign posted; distance markers on floor; signs posted on the door; hand sanitizer available to patrons and staff; and no dine-in.
- Discussed results of the inspection with the owner, no signature obtained due to the pandemic.
