Store
- "simple goodness" open cooler in front of deli on store floor warm on one end only. Wraps/Gyozas stored on the end that is warm. Gyozas/wraps must be stored so they are not sticking outside of the cooler (over stocked). Check airflow, unit may be overstocked affecting temperature control. Ambient air 4.8 inside cooler, however double stacked items are 10-15C. Remove wraps/meats and gyozas that are sticking out of the cooler and discard is kept in cooler over 4 hours.
