Observation: Back door is being left open. This can lead to the entrance of pests.

Comments

Routine inspection.
Handwashing stations are equipped with liquid soap, hot/cold running water and paper towels.
Washroom facilities are equipped with liquid soap, hot/cold running water and paper towels.
Walkin cooler at 3c and equipped with thermometer.
Under the counter coolers in cooking area at 4c.
Walkin freezer at -18c.
Under the counter freezer (for fries) at -18c.
All hot holding units were found at 60c or above.
For example: Mashed potatoes found at 68c during time of inspection.
Hot holding units are now being stored on easy to clean food prep counter.
Dishwasher reached 50ppm concentration for sanitize cycle.
Quat santizer at 200ppm concentration in sanitizer buckets for food contact surfaces.
Foods are being located off the floor.
Dry storage area is organized appropriately.
Employees are wearing proper protective wear (ie. uniforms and hair restraints).
Foodsafe certified employees are available onsite.
Abell pest control is contracted for pest control inspections. Inspections are conducted twice weekly.
All documentation is available for pest control inspections.
Overall sanitation is significantly improved.
Note: A copy of the new sanitation/walk through procedures were provided to Environmental Health officer during this inspection. All employees are responsible to complete designated tasks related to sanitation and foodsafety. This is completed on a daily basis.

2. Reminder: Ensure all foods are put into the walk-in cooler as soon as possible and all cooling is done following proper cooling procedures (ie. 60c to 20c within 2 hours and 20 to 4c within 4 hours)
