Observation: Large side of thick roast beef stored covered under plastic wrap, in metal cooling tray, on bottom shelf of upright fridge.
Operator said that roast is pulled out during the day from the oven, cooled on the counter for some time. Whole roast is then covered and placed in fridge to cool overnight.
Operator said internal temperature was checked after cooking, 160F/71C.
No records for cooking or cooling processes.
Internal temperature of roast <4C.
Fridge temperature <4C.
Corrective Action(s): Review proper cooling processes in your Food Safety Plan.
Record internal temperature of roast to track cooking and cooling processes.
Ensure roast is cooled as quickly as possible.
Cut roast into smaller portions after settling for about 30min; smaller portions stored in the fridge allow roast to cool quicker.
Current roast needs to go through recooking before serving.

Observation: Black drain flies or other type of small flies are found in the back door area (multiple garbage and compost are stored in lidded bins just behind the door).
Flies are found in dry storage area on boxes with food items.
Grease trap and floor drain in this back area.
Majority of food are stored in lidded containers and sealed bags.
Corrective Action(s): Consult with pest control contractor regarding the flies and where they could be coming from.
Store garbage containers further away from back door.
Install a light trap or other means to control the flies.
Ensure no flies are inside food and food storage containers.

Hand wash station supplied with hot and cold running water, liquid soap in dispenser and paper towels in dispenser.
Soaps on walls are labelled as a sanitizer brand- this is confusing for staff, please re-label and ensure all staff are hand washing without hesitation/confusion.
Fridge temperatures <4C.
Temperatures of coolers are recorded, great job.
Freezer temperatures <-18C.
Dishwasher hot water sanitizing cycle, max final rinse temp 71C; 180F at the gauge.
Probe thermometers available for checking cooking temperatures.
Quat sanitizer was dispensing at 100ppm Quat at beginning. Operator got it working and it was dispensing 200ppm near the end of the inspection. Test strips are available on site to test. Thank you.
Food prep surfaces, floors and walls appear to be clean, free of food debris and in good repair.
