Observation (CORRECTED DURING INSPECTION): At the time of inspection chlorine concentration in spray bottle well over 200ppm. Chlorine concentration in one container ~50ppm.
Corrective Action(s): Ensure during operation a 100ppm bleach sanitizer solution is prepared and available for use at all times. General sanitizer formula: 1 oz of regular unscented bleach to 1 gallon of water.

Observation: Several containers of food stored in the under the counter sections or the preparation coolers and sliding glass door coolers not adequately covered.
Corrective Action(s): Cover all food containers with tight fitting lids or saran wrap. Ensure all food is protected from contamination at all times. Correct by February 9, 2022.

Observation: Food debris accumulations observed underneath and behind equipment.
Corrective Action(s): Thoroughly clean underneath and behind all equipment. Correct by February 22, 2022.

Observation: Paper towels not placed in paper towel dispensers for the kitchen preparation sink and front service area hand sink. Kitchen designated hand sink has been removed and is pending replacement. To be serviced within the next few days. In the interim the preparation sink to be used.
Corrective Action(s): Ensure all hand sinks are provided with hot/cold running water, liquid soap, and paper towels in dispensers. Correct immediately.

Routine inspection:

Discussed making changes to kitchen for the installation of a walk in cooler. Submit plans to the health department prior to making any changes.

Sliding glass door coolers at or below 4 degrees C.
Two door freezers at -14 to -16 degrees C.
Upright freezer at -14 degrees C.
Chest freezer at -24 degrees C.
Preparation coolers (2) inserts at or below 4 degrees C. Lower sections at or below 4 degrees C.
Hot holding above 60 degrees C.
After correction 100ppm bleach sanitizer solution available for use.
Dishwasher registers 72 degrees C at the plate surface during the final rinse cycle.
Bar glass washer registers 50ppm chlorine during the final rinse cycle.
200ppm quats available for use in front service area. Reminder to follow dilution instructions from the manufacturer.
Permit posted in plain view of the public.
Temperature monitoring records maintained and available for review.
