Observation (CORRECTED DURING INSPECTION): Chicken eggs, duck eggs, and empanadas were probed at 10C to 15C.
Corrective Action(s): Cold potentially hazardous foods must be stored at 4C or less to prevent potential growth of pathogens and or the formation of toxins. The following items were discarded at the time of inspection: 240 chicken eggs, 32 duck eggs, and 6 empanadas.

Observation: Coca-Cola cooler was at 10C and Pepsi cooler was at 15C.
Corrective Action(s): Refrigeration units must be able to maintain 4C or less at all times. Service or adjust cooler unit to ensure it is able to maintain 4C or less at all times before using refrigeration units to store cold potentially hazardous foods.

Comments

-Freezer units ranged from -10C to -17C.
-Random selection of canned items were found to be within their best before dates and in good condition.
-Did not find any unapproved foods in the facility at the time of inspection.
*Bags of rice were stored on top of cardboard boxes. Ensure food contact surfaces are smooth, non-absorbent, and easily cleanable.
-General sanitation good at the time of inspection.
*Facility currently does not have a permit to operate the kitchen in the back. Facility is not to operate the kitchen as a restaurant in the back without a health permit. Operating a food service establishment without a permit to operate may result in the issuance of a violation ticket.
