Observation: Following require cleaning and sanitizing - To be completed by February 25, 2020
Corrective Action(s): - Ceiling in dining room
- All Exhaust hoods require servicing/cleaning. Including ones in dining room - Operator has scheduled appointment prior to follow-up
- Grease/food accumulation around grills at stations in dining room
- Cook line - inbetween, under and behind all equipment
- Clean gas stove not in use or remove from facility (by handsink)
- Remove all duct tape
- Clean and sanitize storage racks - ensure bottom rack is 6" off the floor
- Remove cloths used to line racks/shelves in kitchen
- Remove any equipment/items not in use
- Clean bins storing equipment
- General cleaning/degreasing required at common surfaces, walls, shelves, handles, etc.
- Ice machine sheild

Observation: 1. Prep/Line cooler in kitchen is not in operation at time of inspection
2. Lighting fixutures require bulbs where fused and/or missing - Increase lighting in kitchen and dishpit area.
Corrective Action(s): This prep cooler is required for operation - service and/or replace unit. To have replacement or a plan in place by follow up inspection - February 25, 2020
2. Ensure all bulbs are replaced and light fixtures are in good working order - to be completed by February 25, 2020
