Observation (CORRECTED DURING INSPECTION): 1.No sanitizer solution available in kitchen area.
2. Food dicer lid -jammer stuck in feeder port of lid - mold build up
Corrective Action(s): 1.Ensure a sanitizer solution of 100 ppm chlorine is available in a bucket with clean wiping cloths in kitchen /food prep areas at all times during operation. Operator made a 100 ppm chlorine solution during inspection. Repeat violation, next routine progressive enforcement may be taken if violation is repeated again.
2. Ensure all dishes are properly washed and sanitized to prevent mold or pathogen growth. Lid of dicer is in sink to be cleaned however it took time to allow mold growth. Remove jammer and properly clean lid or replace it.
