Routine Inspection:
- Hand washing station equipped with hot/cold running water, liquid hand soap and paper towels
- 3 compartment sink available for manual ware washing
- Baking pan washer registered at 71 C at the plate level
NOTE: Ensure that the machine is ran at least twice before pans are washed
- Quats sanitizer dispenser and spray bottles at 200 ppm. Quats test strips available.
- Cooler units (walk in, under counters, and display) at 4C or below
- Walk in freezer at -18C
- Temperature records are maintained daily
NOTE: Add baking pan washer temperature check as part of daily routine
- Whipping cream and glaze machine nozzles are taken apart and cleaned at the end of production
- Self serve area with clean tongs available, hand sanitizer station next to it.
NOTE: Ensure these tongs are cleaned and disinfected routinely through the day
- No signs of pest activity during the inspection.
- General sanitation is satisfactory
