* Ensure that all trays of fresh cut fruits are stored away from any raw meats/bacon etc.
Upright refrigerator < 4 C.
Upright freezer < -18 C.
Dishwasher final rinse : 71.5 C at the plate surface.
Liquid soap and paper towels available at the hand sink.
Bleach sanitizer in spray bottle tested 200 ppm. Ensure to replace the sanitizer every 2nd day.
All cleaners in spray bottles are labelled for contents. good.
Temperature logs are up to date.
General sanitation is satisfactory.
