SDSS High School - Teaching kitchen.

- Temperature Control: No concerns note this date. Monitoring required. Temperature gauges are to be securely fastened, easy to view, inside all refrigeration units for monitoring. Monitoring of internal cooking temperatures is required.
- Mechanical Dishwasher: High temperature (Hot) = Ok.
-> Wiping cloth storage discussed/reviewed.
- Food Storage: Ok. Effort to be made to keep all items stored off of floors. Continue efforts to keep all spices stored in covered, rodent proof containers.
- Chemical storage: Ok.
- Sanitary Facilities: Ok.
- Staff/Student hygiene: Discussed.
- Sanitation: Ok.
- Ice bin cleaning discussed.
- Meat slicer cleaning/disinfection reviewed and discussed.
- Garbage/Recycling/Composting Storage: Items to be kept stored in covered, rodent proof containers.
- Rodent Control: As noted. An active rodent control program is required within this facility. An assessment of all entryways is to be conducted by a certified pest control company. (ie: Area around ceiling vents - commercial canopy vents leading directly into attic area?)
