Multiple knives observed to be kept in wooden crevise beside the wood chooping block in the kitchen Corrective Action(s): Operator removed all knives and place them in dishwasher at the time of inspection. Ensure to keep knives in a sanitary manner. Violation Score: 3 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: THIS IS A REPEAT VIOLATION. Pool of grease observed under left wok gas ranger in the kitchen. Operator reports he has cleaned it and it leaked again. Corrective Action(s): Ensure to clean and sanitize the puddle of grease under the kitchen wok gas ranger as it is a potential fire hazard. Date To Be Corrected: Immediately Violation Score: 3 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: THIS IS A REPEAT VIOLATION. Rubber seal observed to be duck taped on the right door of the 2 door freezer inside the kitchen.
