Food not cooled in an acceptable manner [s. 12(a)]
Observation: Cooked chicken cooling at room temperature. Cooked beef being held at room temperature. Both measured around 40C. Operator indicates that both of these were cooked an hour ago.
Correction: You may not keep cooked foods at room temperature. This is a repeat violation. You must keep foods hot or you must cool them properly in the walk in cooler. Further repeat of this violation will result in a violation ticket.

Observation: Miso soup pot is sitting on the floor and measured 40C
Correction: You may not store hot foods at room temperature. Decide what you would like to do for hot holding, and please implement.
Comments

Cooling and hot holding concerns have been addressed. No potentially hazardous foods were being held at room temperature at time of inspection. Please ensure that foods are being properly stored - hot foods must be held hot, above 60C, and cold foods must be held cold, below 4C. All foods must be cooled in the walk in cooler before going into the smaller bar fridges.

Cleaning has been completed, although ventilation hood has not been completely serviced. Company is scheduled to return to finish ventilation hood service.

Walk in cooler has been better organized for proper storage - raw meats are being stored away from vegetables.

Operator mentioned that he might be purchasing a prep cooler for kitchen area, to help with cold food storage.
