Observation (CORRECTED DURING INSPECTION): Meat slicer, vegetable dicer observed to have built-up of food debris on the blades and guards.
Corrective Action(s): Clean and sanitize the aformentioned items. Meat slicer and vegetable dicer must be cleaned and sanitized after each use. Meat slicer must be fully dissemble prior to cleaning.

Observation (CORRECTED DURING INSPECTION): No prepared chlorine sanitzier bucket available in the front or back for the food preparation area.
Corrective Action(s): Prepare chlorine sanitizer bucket for the front and back food preparation area to measure between 100-200ppm to ensure proper sanitation of food contact surfaces.

Handwashing sink at the front is well equipped with hot and cold running water, liquid soap, and paper towels.
2-compartment sink available for warewashing. Bleach on-site.
Prep cooler and walk-in cooler measured at 4C. Chest freezer at back of house measured at -18C. Hot-holding unit measured at 60C air ambient temperature.
