Observation: Mouse activity noted in many areas of bar and at gap of walk-in in back of kitchen as discussed.. also noted on secondary counters/shelves, on floor under plumbing fixtures etc. Mouse traps observed, a couple of traps observed with dead mice. Food and debris noted in similar areas.
Corrective Action(s): Make sure Pest COntrol technician is setting and removing traps when needed, and that the traps are set properly.
It is important to clean the floor in this area to support pest control practices.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The following ares noted with accumulations of food debris and/or build up of stagnant water:
- Bar area, including floor and shelving below counters. Some counters too.
- Dishpit including floor, around some pipe networks, under counters and behind stainless steel panels leading from dirty dish station.
- Floor around glasswasher.
- Beverage syrups station in basement.
- Area along back wall of deep fry and grilltop station.

Corrective Action(s): Target above noted areas for thorough cleaning. Add detail to sanitation plan to ensure these areas do not suffer accumulations.

dishwasher at 30 to 50 ppm chlorine at 55 C rinse water temperature. OK.

Basement floor continues to be a project. Make sure the stairs leading to basement are regularly cleaned to ensure build up of dirt and debris is minimized.
**Floor (keg cooler) painted, but painted black. Re-paint in off season to light colour as discussed.
