Observation: A large container of rice were being prepared on the floor at the start of the inspection.
Do not prepare any food or store any food directly on the floor. This is especially important due to the known pest issue currently at your facility.

304 - Premises not free of pests [s. 26(a)]
Observation: Pest droppings noted in multiple areas of the premises - see violation #306.
As per staff, droppings were cleaned from the previous days and it appeared that these may be fresh droppings.
Operator has contracted Atlas, a pest control company, to help with managing their pest issues.

Corrective Action(s): Work with your pest control company to implement Integrated Pest Management at the facility to help manage the current pest issue.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Mouse droppings still noted in various areas of the premises - cooking area and storage rooms.
2. Grease buildup noted along the fume hood.

Corrective Action(s): 1. Wash, rinse and sanitize all areas noted with mouse droppings. Work with your pest contractor to control the pest issue.
2. Clean off the grease buildup noted on the fume hood to prevent a potential fire hazard and to avoid grease from dripping into any food being cooked below.
Clean up all areas noted with grease and buildup as these will act as a food source for pests in the facility.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION): Improper scoops with no handles (plastic containers) still noted being in-used for dispensing bulk food. 2 containers were noted in-use by the flour and chickpeas bulk container.
**Issue corrected at the time of inspection** The 2 containers were removed.
Corrective Action(s): Use proper scoops with handles to dispense food from their bulk containers. Heat resistant toxins from bacteria on the hands may be transferred to the containers and then transferred to the food that may lead to foodborne illnesses. Discontinue the practice of using improper scoops/ containers with no handles.

Follow-up inspection conducted for inspection report# KLAI-CCZSFP
Both handwash stations in the kitchen area are now equipped with hot and cold running water, paper towel and liquid soap.
100 PPM chlorine residual detected at the plate level after the rinse cycle in the now converted low temperature dish machine.
The general sanitation has improved at the facility however more cleaning is still required.

Another follow-up inspection will be conducted within the next two months. Premises must be able to show proof that they are working with their pest control company and improvement from the last routine and current inspections or else increased enforcement actions may be taken.
