Observation: many areas of the kitchen not maintained, microwave not cleaned, sink basins have food grime/ grease build up, hard to reach areas such as corners, shelves, behind & under large equipment, walls behind prep counter have food grime and build up of debris & dust; areas such as the staff washrooms were poorly maintained; areas such as window ledges, stairs to basement, handles & doors of walk in coolers were poorly maintained & not cleaned. Mop sink area in basement adjacent to food prep area not maintained.
Corrective Action(s): please ensure sanitation plan is followed, please ensure the above listed areas are thoroughly cleaned; please ensure equipment & utensils are organized & not scattered through out the kitchen
