Observation (CORRECTED DURING INSPECTION): Barbecue food items (various) stored on rack of hot holding unit that does NOT produce heat. This hot holding unit was to be repaired such that additional heating element was added. In the mean time staff were to use only the one side where the heating element works.
CORRECTED DURING INSPECTION - food items found at less that 60C were reheated in oven and on stove top.
1) Install additional heating element.
2) Obtain thermometer for staff IMMEDIATELY (staff to have thermometer TODAY).
3) KEEP DOOR CLOSED to hot holding unit.

Observation: Glass door remains broken. Glass door is to be picked up from manufacturer. Replace door as soon as possible - this item was to be completed on 23 of December.

Observation: Lack of Food Safe trained staff on duty today. None of the 3 staff members on duty were adequately trained.

Comments

The following items are required:
1) Provide Fraser Health with copy of Foodsafe certificates for facility.
2) Hot holding unit glass door has not yet been repaired.
3) Hot holding unit requires additional bottom heat source.
4) Sanitation plan completed & submitted.
5) Food Safety Plan to be completed & submitted for approval. Each food item needs to be listed with specific instructions as to re-heat items.
6) Thermometer required to monitor food items that have been delivered to determine what food items need to be reheated.

HEALTH INSPECTOR TO RETURN TOMORROW: to ensure thermometer is at facility, proper reheating is occurring, to ensure proper hot holding at temperatures greater than 60 Celsius and adequately trained staff.
