Observation (CORRECTED DURING INSPECTION):
- REPEAT VIOLATION: No sanitizer observed in use inside the kitchen nor at the front bar.
Corrective Action(s):
- Ensure sanitizers in buckets are made everyday before premises opens. Chlorine sanitizer (200ppm) was made at the time of inspection.

Observation (CORRECTED DURING INSPECTION):
- Half-empty water bottle and an unopened beer can observed inside ice machine.
Corrective Action(s):
- Do not store drinks or other items other than ice inside the ice machine. Operator removed the items from the ice machine.

Observation (CORRECTED DURING INSPECTION):
- Observed frozen meat being thawed under warm water. Temperature of the water bath measured at 36C.
Corrective Action(s):
- Do not thaw frozen food items under warm or hot water. COLD water should be used.

Observation:
- REPEAT VIOLATION: Mouse droppings observed along the edges of wall inside kithcen.
Corrective Action(s):
- This is ongoing issue. Operator has professional pest control company visiting every month. However sanitation is not being maintained. Operator do not have physical copies of the report available. Send the most recent report to the undersigned by 9am of Feb 21, 2023. CLEAN and SANITIZE all areas affected with rodent droppings.
