Corrective Action(s): Ensure all food when stored is properly covered and stored of the ground to protect it from contamination. Keep all bowls of food stored on secure shelf and not on boxes (unsecured)

Routine:

-Handsink supplied with hot & cold water, liquid soap and paper towel
-Low temp dishwasher noted 100 ppm chlorine
-Sanitizer noted at 200 ppm QUATS
*test strips water logged - no longer usable. Do not leave test strips next to handsink, get new test strips and keep in dry place near sanitizer dispenser (recommend on the wall above dispenser).

-Temperatures satisfactory:
1. Prep cooler: 4 C
*Keep top lids down when cooler not in use to maintain lower cooler temp
2.Walk in cooler: 3 C
3.Beverage cooler: 4 C
4.Freezer unit: -16 C
5. Pizza display: pizzas are discarded every 2 hours.
*No log recorded - maintain a log for each pizza to time track that pizzas are only kept for 2 hours and then discarded. This must be done or next time it will be a violation - follow your FSP

-Back door kept closed - screen door available with door sweep
-General sanitation satisfactory
