Observation (CORRECTED DURING INSPECTION): QUATs sanitizer in spray bottle (X2) measured at 0 ppm QUATs concentration during time of inspection. Staff replaced emply sanitizer stock bottle located at 2-compartment sink with a new stock bottle. QUATs concentration later measured at 200 ppm QUATS concentration with test strip. QUATs test strips are available on site (expire 2023). Staff statd that sanitizer strength is checked once per week.
Corrective Action(s): Check sanitizer strength at least once per day (or as per approved sanitation plan) to ensure sanitizer is at 200 ppm QUATS concentration to effectively sanitize food contact surfaces, equipment and utensils throughout the day.

Routine Inspection Conducted

Observations:
- All coolers at or below 4'C
- All freezers at or below -18'C
- Temperature logs are maintained - good!
- General sanitation of premise is satisfactory during inspection
- Hand washing stations observed unoccupied and supplied with hot and cold running water, liquid soap and paper towel
- High-temperature dishwasher measured at 82.1'C at plate surface (above minimum required final rinse temperature of 71'C)
- 2-compartment sink available with drain plugs and QUATs sanitizer
- Staff washroom observed in sanitary condition
- No signs of pests during time of inspection
- All food stored at least 6 inches off the floor and covered
- First-in-first-out method implemented. Time stamps available on prepared food containers
- Equipment stored in a sanitary manner
- Chemicals are observed stored away from food
- In-use rice scoops are changed every hour (as per sign reminder next to the rice warmer)
- FOODSAFE Level 1 trained staff is available on site
- Staff observed wearing clean uniforms
- Permit posted in conspicuous location
