Observation (CORRECTED DURING INSPECTION): Defrosted meat - surface temperature 9C and internal temperature 1C, brought out of cooler two hours ago - was stored on the counter top in the kitchen
Corrective Action(s): - Store all the meat in the cooler below 4C. Bacteria start multiplying when temperature is greater than 4C.
- Bring out a small batch for preparation everytime

Corrective Action(s): - Transfer the contents of the metal can once it is opened
- Cover all food items in the cooler with saran wrap or lids. Donot store raw meat above the vegetables

Observation: Frozen beef was thawing at the room temperature on the drain boards of the three compartment sink
