Comments

Dishwasher repair person came last friday to service the dishwasher. Requires a part.
Staff will wash dishes in the dishwasher and then use a bleach dip to sanitize before air drying. Use bleach concentration of 100ppm (1 ounce bleach to one gallon water) and soak for 2 minutes minimum.

Using a dishwasher that is not properly sanitizing dishes could lead to spread of pathogens and illness to customers. Bleach dip must be used for every load until the dishwasher is repaired to maintain at least 71C at the dish surface.
