Observation: Large amount of personal employee foods at food preparation table in main processing area -mugs, chips, nuts.

Personal foods also observed in the Walk-in cooler: -raw eggs
Corrective Action(s): Remove ALL personal employee foods from the processing and food storage areas to your lunch room and fridge upstairs.

Workers are NOT to eat/drink in food preparation areas

Observation: Flying insects observed in front lobby area
Corrective Action(s): Continue with the sticky traps. Provide the last work report from your professional pest control. Clean and disinfect surfaces

Observation: -Back warehouse doors (where trailers used to be connected to in previous inspections) were observed wide open and wedged

-A few open bulk foods (food additive) not stored in rodent proof containers
Corrective Action(s): -Keep these back doors shut tight to better prevent the entrance of pests such as flying insects and rodents. If you need more ventilation you will need to install screen doors flush with the door frame

-Any open bulk foods must be stored in rodent proof containers (lids shut tight at the end of the day) to better prevent pest entry

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Exhaust hood vents where the fried tofu is cooked -there is no "next cleaning date" for the exhausts.

Some of the front vents are caked with grease
Corrective Action(s): Your exhaust hood vents must be professionally cleaned (exhaust all the way to the roof) at least once a year. You are to submit the next cleaning date contract to ensure it is cleaned (within 1 week)

Clean and sanitize the front vents more frequently to prevent the buildup of grease

Observation: -Chest freezer does not close properly and surface temperature of foods is only -1 deg C -there is a buildup of ice preventing the lid to close

-One of the Walk-in cooler compressors is leaking water
Corrective Action(s): -Defrost and remove the ice buildup of the chest freezer

-Repair the leak at the compressor

NOTE: operator has removed the 2 truck trailers that were hooked up to the 2 bay doors in the back.
NOTE: operator indicates the processing area ceilings are cleaned every 3 months -operator to provide a schedule on when the ceilings are cleaned

Walk-in cooler 2 deg C -cooling flaps in place

-Manual Washing reviewed: wash-rinse-sanitize with bleach then air dry at 2-compartment sink -sanitizer measured at >100ppm chlorine residuals
-Large equipment Manually Washed at vats using Caustic soda, high temperature rinse >82 deg C then air dry

General sanitation pass

Handwash sinks adequately stocked and clear for use
NOTE: place a garbage next to each handwash sink to facilitate it's use
