Observation:
Raw fish and meat are being stored above RTE foods in the walk-in-cooler. Raw juices from thee foods could fall on to RTE foods, which could cause people to become ill when eaten.
Corrective Action(s):
Re-organize the walk-in-cooler so that foods are stored in groups. Store all raw fish and meat on the lowest shelf below all other foods. Store veggies and fruits together, sauces together, and RTE food together.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation:
The back door has a space along the bottom that will allow pests to enter.
Corrective Action(s):
Install a door guard or door sweep to the bottom of the door to stop the entrance of pests.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The door seals/gaskets on the kitchen assembly cooler doors are damaged and the doors do not close tightly. Cooler doors not closing tightly will allow warm air in and possibly warm food up, and it will cause the cooler motor to constantly work.

2) There is leaking pipe under the 3-compartment sink in the dishwashing area. Water is pooling in a bucket, this will attract pests.
Corrective Action(s):
1) Install new door seals/gaskets so the cooler doors tightly close.

2) Repair or replace the leaking pipe so that it no longer leaks.

Observation:
There are cracked and chipped floor and wall tiles throughout the kitchen, and grout has worn away between tiles as well. These surfaces are not cleanable and will attract pests.
Corrective Action(s):
Repair and/or replace all damaged tiles and missing grout in the kitchen so that all surfaces are durable, cleanable, sealed, and impervious to water.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher was 72.3C during the rinse cycle, at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach present for sanitizing.
- Foods stored in food grade containers, covered, and 6" off the floor on shelves.
- No expired foods for sale. FIFO rules being followed.
- FoodSafe certified staff present. BE ADVISED, certificates obtained PRIOR to July 2013 will expire July 2018. Go to www.foodsafe.ca to register for the refresher course and obtain a valid certificate.
- General sanitation level is satisfactory. Increase the frequency at which hard to reach areas are cleaned (beneath & behind cooking equipment, shelves and cupboards).
- No signs of pests.
- All violations from the previous inspections have been addressed.
