Observation (CORRECTED DURING INSPECTION): No sanitizer being used at facility.
Corrective Action(s): Staff went and bought bleach.
Bleach and water sanitizer was made, test strip reading about 200ppm.
Bleach and water solution was put into a bottle and labeled.

Do not use Lysol wipes for food contact surfaces.

Observation (CORRECTED DURING INSPECTION): 1) Open bags of tripe found in one of the basins in the three compartment sink. Manual rinsing was being done in the basin beside open bags of tripe.
2) raw meat stored above vegetables
Corrective Action(s): 1) Open bags of tripe were thrown away, food was not protected from contamination due to the back splash of the manual warewashing happening in the basin beside.
2) cooler was re organized, vegetables stored higher than raw meat. Raw meat on bottom most shelf.

Ensure that food is protected from contamination at all times.

Corrective Action(s): Food must be thawed in an ice bath or in the cooler.
