Routine inspection conducted due to ownership change:
- Coolers below 4C; thermometers present; and temp. recorded daily. Hot holding unit (pizza slices) present but not on, as not using at this time.
- Hand sinks stocked with liquid soap, paper towels, and running hot + cold water.
- Quats sanitizer has 200ppm strength.
- Sanitation level is good.
- No signs of pests.
- FSP, SP, and COVID-19 mitigation plans developed.
- All foods stored 6" off the floor; in food grade containers; covered; labeled; and in groups.
- FS certified staff present
- Permit fees of $125.00 obtained. (cash)
The following items shall be completed prior to opening:
1) Have the exhaust hood professionally cleaned, and ensure this is done regularly.
2) Have the grease trap professionally cleaned and maintained. Replace and/or reseal the top lid of the grease trap so it is sealed + cleanable.
3) Peel off the plastic, protective layer on the walk-in-cooler door + door frame.
4) Fill in the space around the sewer pipe, under the 3-comp sink, so the floor is level, sealed and cleanable.
5) Secure and seal the wall tiles beneath the 3-comp sink.
6) Paint the wall behind and beneath the 3-comp sink. so it's sealed and cleanable.
