-Follow-up inspection to September 26, 2018.
-Operator is now using 15L containers (filled to approximately 3/4 full) and fat is removed from the broth. Broth made the previous day was probed at 4C.
-Bleach sanitizer pail and spray bottle was at 200ppm.
-High temperature dishwasher door has been serviced and no longer requires a pad wedged in the door to allow dishwasher to function. High temperature dishwasher had a final rinse temperature of 74C on the dish surface (minimum 71C required for proper sanitizing).
-Foods properly stored off the floor at the time of inspection.
-Did not observe issues surrounding hand hygiene at the time of inspection. Ensure all staff are made aware of proper hand hygiene practices and practice proper hand hygiene at all times.
