Observation (CORRECTED DURING INSPECTION): No sanitizer residual detected in the mechanical dishwashing machine at onset of inspection (0ppm chlorine). The sanitizer feed tubing was not fully submerged in the sanitizer pail, resulting in the dishwasher running dry when the sanitizer level drained to the level of the feed tube.
Corrective Action(s): *Obtain rigid plastic sleeves from the dishwasher supply company to ensure that the feed tubing is held fully-submerged at the bottom of the dishwasher chemical pails.
*Confirm chlorine residual levels every morning as part of the morning shift duties

Comments

- Hand-washing basins are stocked with hot/cold water, soap, and single-use towels
- Refrigeration temperatures are ≤4o Celsius with the exception of the refrigeration units on the front service line (~7 degrees C after lunch rush)
*Discussed with kitchen staff--temperatures were checked this morning prior to lunch period and confirmed to be operating at safe temperatures (ie. 4 degrees C or colder)
- Freezer temperatures are satisfactory
- Quaternary-ammonium food-contact surface sanitizer solution available at 200-400ppm concentration (Ecolab Oasis 146)
- Bar glasswasher providing 12.5ppm iodine sanitizer residual
- Foods in storage are elevated off floor ≥6”
- Foods stored in closed/covered containers & protected from contamination
- Good stock rotation practices observed (date-labelling, FIFO practices in use)
- Overall sanitation is satisfactory
*Ensure to clean up food debris & spills on a daily basis to prevent soil accumulation underneath countertops, shelving and equipment
