Observation: Black mould observed inside the ice machine behind the panel (working components). Mould can contaminate the ice.
**Correct by: IMMEDIATELY**
Corrective Action(s): Clean and sanitize the ice machine thoroughly. Ensure that the entire ice machine is cleaned and sanitized regularly e.g. every 2-3 months.

Observation: The back door leading to the patio (closest to the kitchen) has a gap at the bottom that is large enough to allow entry of pests.
**Correct by: ONE WEEK = March 25, 2019**
Corrective Action(s): Seal the gap at the bottom of the door.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The following areas require attention:
- Debris/grease build-up underneath grills, especially close to the left-side wall
- Fume hood filters are forming a build-up of grease and require a rinse and run through the dishwasher
- Dust observed on the walk-in cooler fans and ceiling area. Dust can contaminate foods stored inside the cooler.
**Correct by: TWO DAYS = March 20, 2019**
Corrective Action(s): Clean the above-noted areas thoroughly.

Observation:
Observation #1: Tiles have fallen off the left wall beside the grill. Apparently they were torn off during pressure-washing? All surfaces must be smooth, durable and easily cleanable.

Observation #2: Light bulbs in fume hood do not work? Not turned on? Adequate lighting must be provided for cooking and cleaning purposes

General Comments
All coolers operating at </=4 C; freezers at </= -18C. Foods stored 6" off the ground and covered to protect from contamination
No hot-holding at the time of visit
High-temperature dishwasher reached > 74C at the plate level upon final rinse cycle (min/max probe thermometer)
Temperature records for coolers/freezers and dishwasher maintained daily
Quats sanitizer coming out of dispenser unit at 200 ppm. Spray bottles also at 200 ppm. Test strips available.
Handsinks equipped with hot and cold running water, liquid soap and paper towel
No signs of pests observed. One trap in kitchen was not set-up correctly (corner by microwave?)/ As per last inspector's recommendation, please consider implementing sticky traps
Dry storage OK, foods stored *mostly covered
