Comments

General Comments:
Walk-in cooler for deli meats at 3.2C. Shelves were in sanitary condition. All food items were in their original packages and covered. All food items were stored off the floor.
Walk-in cooler at the back at 2.1C. Shelves were in sanitary condition. All food items were covered. Thawing of soup, beef and other frozen foods observed inside walk-in cooler. Covering of chickens observed in walk-in cooler.
Deli display cooler at 2.4C
Salad display cooler at 3.4C
Sandwich prep cooler at 3.7C
Prep cooler near sandwich prep cooler at 2.6C.
all coolers had accurate thermometers available.
Fried food items (chicken wings, chicken legs, etc.) hot held at 76.4C.
Temperatures checked twice daily and recorded.
Temperature records available for coolers, hot holding units and cooking temperatures.

Sanitation:
High temperature dishwasher reached 74.6C at plate surface level at final rinse cycle.
Two spray bottles of Quats available at 200ppm.
Three compartment sink available for warewashing. Sanitizing compartment filled with Quats at 200ppm at time of inspection.
Utensils such as scoops replaced at every use.Dirty utensil bin available for separating used and clean scoops and utensils.
Vegetable slicer observed to be insanitary condition.
Meat slicer for deli meats cleaned and sanitized every 2 hours. PaAs are disassembled and washed in dish washer and main component washed and sanitized manually. ONly one meat slicer used a a time and alternator happens every 2 hours.
Can opener observed to be insanitary condition.
Dry storage area in sanitary condition. Items were off the floor.
Chemical storage separate from food.
Ventilation canopies in sanitary condition.
No signs of pest at time of inspection. Pest services done weekly.
Permit posted in a conspicuous location.
Food Safety Training available for staff on site (expiry date: 2025/06/25)

NOTE: Quick chill equipment not in use at time of inspection. Operator statedd equipment was broken and parts were ordered for fixing.
