Comments

Milk cooler, prep cooler are both at 4 C or colder.
Display cooler - air and food temperature are below 4 C. Temperature gauge may not be working properly. A second thermometer is used inside the cooler to verify temperatures.
Milk for lattes - discard after 1 hour. Wash and sanitize the milk pitchers, spoons etc. every 2 hours. Add this to your sanitation plan.
Produce- lettuce, tomatoes, etc. are all washed on site.
Soup hot holding - >60 C - good.
Baked goods to be covered once cool to protect from contamination.
Cooling of soups - for larger volumes of food (eg large roasts or soup), cool quickly in smaller volumes. Advise staff.
Freezer <-18 C.
Wiping cloths are being stored in a chlorine solution of 200 ppm. Do not mix bleach with detergent as it will use up the chlorine (noted in second bucket).
Dishwasher has a final sanitizing rinse of 160 F or hotter as measured inside of the machine and 180 F or hotter shown on the gauge - good.
