Observation (CORRECTED DURING INSPECTION): At start of inspection, dedicated handwashing station in prep area was obstructed by a trolley.

Observation (CORRECTED DURING INSPECTION): Observed the following food items were not protected from contamination:
> 2 opened bags of durum flour
> Trays of chocolate cake toppers in decorations cabinet
Corrective Action(s): All food must be protected from contamination:
> Close or transfer the contents of any opened dry goods.
> All stored food items must be covered.

Observation: Cleaning is required to remove food debris from the following areas:
> Underneath the 3 compartment sink
> Underneath the island prep table and on the shelving layer
> Behind and under the stack of bread loaf tins
> Behind the dough mixer
> Underneath the metal shelving racks by bread slicer
> In the self-serve bread display case, seeds/crumbs noted under the bottom shelf
> Throughout the department, food debris/dry goods such as flour noted on the floors in the walking areas
Corrective Action(s): Clean and sanitize above mentioned areas as per your sanitation plan.
> Maintaining a high level of sanitation throughout operation will help to prevent the presence of pests.

General:
> Automated handsink had running warm water, liquid soap and paper towels.
> 200ppm QUATS sanitizer available at 3 compartment sink and in spray bottles.
> Large dough mixer maintained in sanitary condition.
> No signs of pests at time of inspection.

No signature required due to COVID protocols. Report printed and reviewed with assistant store manager on site.
