Observation (CORRECTED DURING INSPECTION): Mop was left inside two-compartment sink.
Corrective Action(s): Do not clean the mop or dump mop water into this sink. The two-compartment sink is for food-related items only. Corrected; Staff removed mop and washed and sanitized the two-compartment sink at time of inspection.

Observation (CORRECTED DURING INSPECTION): Hand sink in back production area was missing paper towels.
Corrective Action(s): Ensure all hand sinks are properly supplied with paper towels (and liquid soap) at all times. Corrected during inspection.

Comments

- Hand sink at front was properly supplied with hot and cold running water, liquid soap, and paper towels
- Quats sanitizer available at 200 ppm in spray bottle
- Bleach also available for sanitizing wiping cloths.
- High-temperature dishwasher reached above 71C at dish surface during rinse cycle
- All coolers were at 4C or colder
- Walk-in freezer was at -23C
- Meat/cheese slicer, cappuccino machine, ice machine all maintained in sanitary conditions
- Food inside coolers was covered, organized
- Knives stored in designated utensil holder - good
- No hot holding at time of inspection
- Foodsafe certified staff on-site
