Observation: Wall surface adjacent to the oven exhaust canopy as well as the pass through opening observed with grease build up

Observation: Front sandwich cooler (Reliant) in sushi bar area not properly cold holding. Unit may be on defrost.
Wire rack shelving inside the walk in cooler observed to be badly rusted and flaking.
Corrective Action(s): Relocate items to adjacent glass cooler and recheck temperature in 30min. If cooler temperature has not recovered, discontinue use and have unit serviced by technician.
Until wire rack shelving has been replaced, ensure all food items are kept covered. Shelving needs to be replaced by June, 2022.
