Observation (CORRECTED DURING INSPECTION): 2 bins of raw beef stored at room temperature on back kitchen counters. One staff onsite assembling meals at front service area.
Corrective Action(s): To prevent microbial growth potentially hazardous foods such as meat products, cut vegetables, eggs and high moisture grains (soft noodles, soft rice) must be stored at 4 C or colder, unless needed for immediate preparation.

Staff relocated raw beef into walkin cooler.

Observation: Sanitizer spray bottles 0 ppm Quaternary Ammonia.

Wiping rags in use have no sanitizer reservoir available for storage.

Icecream scoop dipper well heavily soiled with food debris.
Corrective Action(s): Sanitizer spray bottles are to be filled with 200 ppm Quaternary Ammonia sanitizer and tested daily.

All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

Icecream scoop dipper well is to be cleaned and sanitized daily.

Observation: Back kitchen handsink - all 3 soap dispensers available are empty and do not dispense soap for handwashing.
Corrective Action(s): Hand-washing stations must be equipped with a stocked liquid soap dispenser, warm water and single use hand drying towels from a dispenser.

Observation: Mouse droppings collecting in the following areas: on back kitchen floor starting at entrance door along back wall to walkin cooler, corners of office counter, on back wall window sill, on floor throughout storage closet, throughout grease trap storage cabinet and single dropping on counter top above dishwasher.

Grease drops forming around perimeter of ventilation canopy and fire suppression nozzles and adjacent ceiling ventilation cover.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of grease and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine) after cleaning.
