Observation: Transfer all toppings on lower shelf of dry storage area from current cardboard boxes to pest proof containers with lid. Mall is infested with rodents and all food should be in pest proof containers to prevent against contamination and infestation of facility.

NOTE: Facility did not have time records for potentially hazardous food items out at room temperature. CORRECTED DURING INSPECTION. Ensure staff are recording and time tracking potentially hazardous food items stored at temperatures greater than 4 degrees Celsius as per COBS Food Safety plan.

- Facility in EXCELLENT sanitary condition

- Handsinks adequately supplied
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Two functional sink plugs available for use
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Hair restraints in use
- Light covers in place
- Cooler handles and seals in good sanitary condition
- Facility has undergone renovations including replacing ceiling tiles and increasing lighting in bakery area
