Sanitizer concentration is checked by staff daily. Ensure that it is diluted if it is too strong. Should be 200ppm for food contact surfaces that need no rinsing after sanitization. Ensure expired product in the hot holding unit is discarded (i.e., chicken breast that was at 130F/54C) Keep bathroom door close. General sanitation is good. No obvious signs of pest noted. Handwashing stations are satisfactory. Temperature of coolers and freezers are satisfactory.. Sanitizers are available.
