301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 1) Surface sanitizer in white bucket with presoaked wiping cloths measured at 0ppm chlorine solution.
2) The sanitizer inside the sanitizing compartment of the three compartment sink measured <50ppm at 24C.
3) There was build of grease and sauce on the white buckets inside the walk in cooler and the door handle inside the walk in cooler.
Corrective Action(s): 1) The staff prepared new sanitizer at 100ppm chlorine solution at 24C. Please follow your sanitation plan which lists the dilution method for chlorine sanitizer.
2) The staff prepared new sanitizer at 100ppm chorine solution to sanitize food contact surfaces.
3) Clean up the areas noted above. Rewash the white containers for food storage.

Observation: White buckets used for food storage stored directly on the floor inside the walk in cooler and uncovered.
Corrective Action(s): Store all white buckets for food storage covered with proper lids and at min 6inches (15cm) off the floor to prevent food contamination.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: The upright cooler adjacent to the hot holding unit was missing a working thermometer.
Corrective Action(s): Provide a working thermometer inside the cooler noted above.

Comments

- General sanitation is good.
- All handwashing stations (front/back) stocked with hot/cold running water, soap, and paper towels.
- All coolers (2 upright coolers, walk in) at < or = to 4C. Note that the walk in unit near the back exit door is not functioning and is used for storage only.
- Chest freezer at -18C.
- Daily temperature logs were not available and kept up to date. Daily temperature logs are to be kept up to date and available on site for review.
- Hot holding units in the front serving area measured at 60C.
- Crock pot hot holding unit for gravy measured at 60C.
- Three compartment sink available for manual dishwashing.Bleach sanitizer available with drain plug to fill the sanitizing compartment of the sink. Please follow the proper manual dishwashing procedures.
- Dry storage area has sufficient space and wire racks.
- No signs of pest activity at the time of the inspection.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.
