Observation (CORRECTED DURING INSPECTION): Meat slicer observed not properly cleaned as substantial food debris observed affixed to the blade. Employee cleaned and sanitized the slicer at time of inspection
Corrective Action(s): Use proper scrubbing cloths to remove the debris from the blade.
Recommend purchasing a flashlight to verify cleaning has been properly done especially on the lower side.

****Set up separate monitoring logs for each individual cooler on the premises. ie one column on the log sheet dedicated for the walk in cooler, one column on the log sheet dedicated for the sandwich prep cooler and one column dedicated for the under counter cooler. This accurate documentation is necessary to demonstrate you are doing your due diligence.
No visible signs of recent pest activity observed
Meat slicer is used twice a week. Slicer is required to be cleaned and sanitized after use as per Subway policy.
Hot holding unit holding at >60c
Premises is aware not to place meatballs into the hot holding bath until the unit has warmed up to properly hold at a minimum of 60c
Front sandwich prep cooler cold holding at <4c
