Observation (CORRECTED DURING INSPECTION): 200ppm chlorine solution not available at the time. Staff was not able to locate the solution when asked. Operator was advised to prepare a fresh 200ppm chlorine solution and store all wiping rags in the solution. REPEAT VIOLATION.
Corrective Action(s): Ensure to have 200ppm chlorine solution available AT ALL TIMES. Do not store rags on countertops/hung on the edge of sinks.

Observation: Hot water purposely turned off at one of the prep sinks due to a leakage issue. This prep area is currently not in use and facility has another prep sink available in the main prep area.
Corrective Action(s): Ensure to have the sink repaired before utilizing this area as discussed at this time.

Routine inspection conducted:

- Handwashing station by the front prep area adequately supplied with liquid soap, paper towels, and hot/cold running water.
- Coolers operating at 4'C; Freezers operating at -18'C.
- Professional pest control company contracted. Traps in place.

General operation of the facility requires a major improvement. Refer to above comments. Follow-up inspection to be conducted on Tuesday, Jan 31, 2023.
Pay attention to repeat violations. As per progressive enforcement, failure to comply in future inspection(s) may result in further enforcement action (i.e. issuance of violation ticket(s)).
