Corrective Action(s): Ensure all PHF is maintained at or below 4 C. Any food above 4 C for more then 4 hours must be discarded.
PHF purchased before June 27, 2016 discarded:
-Tofu
-Bocconcini
-Goat Cheese
-Cheese platters
-Eggs (5 trays)
-Mild Italian Sausage (x5)

PHF received today (June 27) around 11am moved to functioning cooler or freezer:
-Salmon & cod fillets
-Chicken wings & thighs

Correction order issued - Do not store PHF in a walk in cooler > 4 C.

Owner has indicated that unit was serviced during the day June 27, 2016 and unit will take 24 hours to reach correct temperature. Continue to monitor cooler function and keep PHF out of unit until operating under 4 C.
