New sushi cooler doors obtained and sushi coolers are maintained at 0-2C.
Gas was also changed for sushi cooler compressor.
Insulating material was added to prep cooler across from grill. Temperature on the top maintained at 0-2C and bottom at <3C.
Exhaust hood has been serviced.
Floor cleaning improved and reminded to manager that floor between equipment should be cleaned on a weekly basis at minimum.
Dishwasher remains to dispense 100ppm chlorine, readings are taken and recorded.
Tofu and seaweed for miso soup are dispensed by order. Toppings are stored in cooler. Dine in miso soup are stacked and stored in cooler as the the bottom of the bowl does not touch the food.
Handsoap in separate dispenser is available at the kitchen handsinks.
